Hi Dreamers! Have you ever tried to make something vegan and it looks and tastes like cardboard with stuff on top. With my recipes that will never happen. This recipe is kid approved and taste just like the real thing. Quarantine is a great time to discover new talents I know you have. With basic ingredients you can be sure to find in your kitchen (maybe not almond milk) you don't have to suit up in your hazmat suit to make them. Please give this recipe a try! Here's the recipe: Ingredients 1 cup almond milk 1 teaspoon apple cider vinegar 2 cups all-purpose flour 2 teaspoons baking powder ¼ teaspoon baking soda ½ cup granulated sugar ¼ cup canola oil 1 teaspoon vanilla extract 1 tablespoon lemon juice zest of 1 lemon 1 cup berries (frozen or fresh) Instructions Preheat the oven to 375F. Prepare muffin tin (spray or put tins in them) In a small cup combine soy milk and apple cider vinegar. In a larger bowl combine flour, baking powder, baking soda, mix together. Add sugar, canola oil, lemon zest, and vanilla extract. Add soy milk/vinegar mixture and stir to combine. Be careful not to over-mix - a few lumps are okay. Gently fold in the lemon juice and berries . Spoon into muffin tins, filling each cup about ¾ full. Bake for 20-25 minutes until a knife inserted in the middle comes out clean and tops are golden brown. Enjoy! - Vegan Life Dream Life
