Today on The Stay At Home Chef
I'm showing you how to make
Mom's Easy Chocolate Chip Muffins
Everybody loves a chocolate chip muffin!
These muffins are so easy to make and I'mgoing to show you
the tricks for getting that beautiful bigdome on your muffins
You don't want to miss this!
Cream 1/2 cup of salted softened butter
with 1 cup of granulated sugar
in a mixing bowl using a hand mixer
Give it an entire 2 minutes of mixing so that
that mixture is nice and creamy
Then add in 2 eggs
1 teaspoon of vanilla extract
2 teaspoons of baking powder
and 1/2 teaspoon of salt
and mix that in
It only takes about 30 seconds of mixing
to end up with a nice smooth mixture
Then you can ditch your hand mixer becausethe rest
we're going to do by hand.
We're going to start adding in our flour
We're going to add in 2 cups total of allpurpose flour
but we'll only add in half of that to start
Then use a rubber spatula and start stirringthat all in
Once that flour is mostly mixed in we're goingto add in
1/2 cup of milk
Pour that in there and start gently mixingthat in as well
And then we'll add in our remaining flour
Sprinkle that in and start gently stirring
You don't want to overmix
Now there's no way to tell if you've overmixed it
so only stir it until the flour just barelydisappears
You just want to stir it the least amountpossible
Last add in 1 cup of semi-sweet chocolatechips
and fold them in
Next preheat your oven to 425 degrees Fahrenheit
and yes that's hot!
That's going to help us get our dome on top
It causes the steam to release quickly inthe muffins
and have the balloon up which is exactly whatwe want
The other trick that you need to know is tolet your batter rest
So preheat your oven after you've made yourbatter
so that it has a chance to rest and let thegluten inside relax
After the batter has rested we'll fill ourcupcake liners
almost all the way full
Now I know you've probably had muffins spillover
so you're afraid to fill them up all the waybut trust me on this
You have exactly enough batter for 12 muffins
All that's left to do is bake these in the425 degree oven
for 20 to 25 minutes.
Reduce heat to 350 after 7 minutes.
Let the muffins cool in the tin for 5 minutesbefore
transferring them to a wire rack to cool completely.
Then you're ready to eat!

Preheat oven to 425 degrees. Let the batter rest while the oven preheats. 7️⃣ 00:02:23 - Bake in the preheated oven for 20 to 25 minutes, until a toothpick inserted into the center comes out clean. Reduce the heat in the oven to 350 degrees after 7 minutes.
