We’re Adam and Joanne from inspiredtaste.netand welcome to our kitchen.
We’re making Quick and Easy Blueberry Muffins.
Hi guys. This week we are sharing an updateto one of our more popular recipe videos,
blueberry muffins. We love them and it seemslike you do to because you have left lots
of comments and reviews on Inspired Taste.They are so easy. One bowl, one fork, no fancy
equipment and you can do it in 30 minutes.Let’s go make them.
These are so simple and I bet you have everythingyou need already sitting in your kitchen.
First up, the dry ingredients.
You will need flour, sugar, baking powder— which helps the muffins rise, and some
salt.
Mix them well and then move on to the wetingredients.
Grab a measuring jug that can fit at least1 cup.
Then add a neutral oil — like canola orsunflower.
As well as an egg, and then fill to the 1cup mark with milk — dairy and non-dairy
work.
In goes some vanilla extract for flavor andthen whisk.
We are almost there!
Add the milk mixture to the dry ingredientsthen use a fork to combine. Notice that we
are not beating or over-mixing, that wouldmake the muffins flat and tough. For light,
fluffy muffins, use a soft touch and mix untiljust combined.
Now, for the best part! The blueberries. Gentlystir them into the batter. Fresh or un-thawed,
frozen blueberries both work.
For easy cleanup, we use paper liners.
You’ll notice we are only filling 8 cups.This is because we want to make 8 big muffins.
To help the muffins bake evenly, we add alittle water to the unfilled cups.
By only filling 8 muffins cups, these muffinswill be big-topped, just like your favorite
bakeries. You could choose to make 12 muffinsor mini muffins. Just keep in mind they may
take less time to bake.
We’re going ahead and filling the cups rightto the top.
Last step. For a slight crunch on top, adda small sprinkle of sugar then slide the pan
into the oven and bake until the muffins arerisen and lightly browned on top.
They look good great! Let them cool a littlethen dig in to to homemade blueberry muffins
bursting with blueberries. Enjoy!
